Peanut Butter Christmas Light Cookies

Ingredients
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/3 cup brown sugar
1/4 cup butter, at room temperature
1/4 cup smooth peanut butter
1/4 cup granulated sugar
1 egg yolk
1/2 tsp vanilla extract
1/2 cup store-bought vanilla royal icing
1/2 small tube black gel icing
3/4 cup M&M’S Peanut, red and green
Directions
  1. Whisk together flour, baking powder and salt; set aside. Beat together brown sugar, butter, peanut butter and granulated sugar until light and fluffy.
  2. Beat in egg yolk until incorporated; beat in vanilla. Stir in flour mixture. Wrap dough tightly in plastic wrap; refrigerate for at least 30 minutes.
  3. Preheat oven to 350˚F. On lightly floured surface, roll out dough into large round, about 1/8-inch thick. Using 2 1/2-inch round cookie cutter, cut out 12 cookies (reserve remaining dough for another use). Place on parchment paper-lined baking sheet, about 2 inches apart. Bake for 8 to 10 minutes or until tops are set and golden around edges. Let cool on baking sheet on rack for 5 minutes; transfer directly to rack. Let cool completely.
  4. Spread royal icing evenly over bottom of each cookie for smooth surface. Pipe black gel icing in zigzag pattern to imitate string of lights. Decorate with M&M’S to resemble Christmas lights.
